To favourite an assessment: 

Swipe left on the assessment -> Tap on the yellow star icon.

The assessment will now be located in the favourites folder.


To unfavourite an assessment: 

Swipe left on the assessment -> Tap on the black star icon.

The assessment will now move back to the assessments folder.
